Kalle Tanner from Villa Störsvik is the Chef of the Year 2018. He stood out with his beautiful dishes and their unique flavor profiles. In semifinals Kalle prepared a vegetarian orientated main course of fried and smoked celery root, onions spiced with elder flower and spruce, mushrooms braised in duck fat, caramelized onion foam spiced with roasted duck skin. His amuse bouche was made from fried lobster, lobster mousse, jelly with Prosecco and water cress flavored clam broth.
In the finals Kalle made marbled file and cheek of beef. Bone marrow and parsley flavored broth and cabbages as a main course. For desert he made Samana-chocolate sorbet, white coffee mousse, milk seasoned with roasted spelt and fennel, grapefruit and toasted warm white chocolate.
