Mikko Kaukonen from Food Camp Finland Oy is the Chef of The Year 2019. He stood out with his beautiful dishes and their unique flavor profiles. In semifinals Mikko prepared Kariniemen Chicken thighs filled smoked Omega-3® Pork Belly, black trumpets, herbs, truffles and foie gras. Creamy chicken velouté, kohlrabi with roasted peanuts, broccoli pure and poached broccoli in parsley oil.
In the finals Mikko made lamb fillet and brewing sauce flavored with lamb fillet fat as a ”Old School” -portion. For ”Street Food” -portions he made: vegetable – grilled Jerusalem artichoke and a foam made from fermented garlic, seafood – mussels, shrimps and red curry and fish – potato, egg and smoked whitefish.

The Chef of The Year (Vuoden Kokki) is the national Finnish championship of chefs.
The jury consists of Finnish and international members. Competitors are awarded for taste and delicacy of the food, proper use of raw materials as well as the originality of the various dishes. The contest has sparked many success stories for the winners.
2015 marks also the 20th Anniversary of The Chef of The Year competition. The Chef of The Year competition has been arranged since 1995. The first winner was Mr. Pekka Terävä.
